Syft Application Talks 1: Garlic Breath Deodorization and Cacao Roasting

Prof. Sheryl Barringer from The Ohio State University presents the inaugural Syft Application Talk. Prof. Barringer has used SIFT-MS in diverse flavor research applications since 2008 and has published extensively in this area.

In this plenary presentation made at the 2019 North American SIFT-MS User Meeting, Dr Barringer gives an overview of the ground-breaking research that her group has conducted on the mitigation of “garlic breath”. Her research has demonstrated that direct breath analysis is essential to understanding and addressing the problem – headspace analysis does not help!

Professor Barringer also describes how SIFT-MS can be utilized to improve food processing and presents a case study describing optimization of cocoa roasting conditions.
